Fried Lobster (Ke juhn)

Six (6) servings.

  • 1/2 pound liver
  • 1 teaspoon salt
  • 2 tablespoons flour
  • 1 egg
  • 2 tablespoons oil
  • 2 cups lobster meat

Boil lobster 20 minutes in salted water, cook and remove meat.

Pack lobster meat firmly into a teaspoon, remove, roll in flour, then in slightly beaten egg and fry in a small amount of oil.

Season with salt.

Serve with vinegar-shoyu.
