Chicken POK-KUM (Tahk pok-kum)

Six (6) servings.

  • 1 small chicken
  • 6 tablespoons soy sauce
  • 2 green onions
  • dash of pepper
  • 2 cloves garlic
  • 3 tablespoons prepared sesame seed
  • 2 tablespoons sugar
  • 1/2 cup of dliced mushroom
  • salt

Clean the chicken.

Using a heavy knife, cut through the meat and bone into pieces 1 inch square.

Cover with boiling water and cook slowly until partially done.

Combine soy sauce, chopped onion (including tops), chopped garlic, pepper, prepared sesame seed, sugar and mix well.

Remove the chicken from the liquid and add to the combined seasoning.

Add sliced mushrooms.

Add liquid in which the chicken was cooked to half cover the chicken and mushroom, then continue cooking until chicken is very tender.

Season with salt.
