Fried Liver (Kahn juhn)

Six (6) servings.

  • 1/2 pound liver
  • 1 teaspoon salt
  • 2 tablespoons flour
  • 1 egg
  • 2 tablespoons oil

Place liver in boiling water and cook 3 minutes. Drain. Remove all skin and slice liver in thin slices 1/8 inch thick.

Sprinkle with salt, roll in flour and slightly beaten egg and fry in a small amount of oil.

Cut in pieces 2 inches long and 1 inch wide.

Arrange attractively on a plate and serve with vinegar-shoyu.
